Yes, 3kg of crayfish!
These crays are not previously-frozen, they have been freshly caught. They're almost entirely deceased (but they're just alive enough to keep them fresh enough for you to eat).
If the crayfish are still moving...
...just put them in the freezer or a sink full of tap-water for 30 mins. (Pro tip: you can cover the sink with a bread board if you wish.) These are the most humane ways to send your crayfish off to permanent sleep.
Never cooked crayfish before?
It's easy - and this is the perfect opportunity to try. Here are a few places to start:
Nadia Lim's BBQ Crayfish with Lime & Chilli
And if lime & chilli isn't your thing, try garlic butter instead!
Our friend Josh Emett has fantastic recipe for Cray Stock in his Instagram stories. Check it out on Insta @joshemett or click HERE to find his page.
And here's a recipe from taste.com.au for the classic Lobster Mornay.
You can also google recipes for Crayfish Risotto or Bouillabaisse - but perhaps the ultimate way to each crayfish is in a sandwich made with cooked cray, fresh white bread and lashings of butter...
